I frequently make mushrooms on toast (with onion and wine (if wine is allowed)) and a potato and red lentil curry. Both are from Jack Monroe's A Year in 120 Recipes.
Also a potato omelette thing with onions and peppers in, cook in frying pan until soft, add eggs, top with cheese and shove under the grill.
I love huevos rancheros - I do make it with chorizo but equally frequently leave it out. If you add some kidney beans into the tomato mixture before you put the eggs in to bake, it makes it a really filling dish. I often have wilted spinach as a side dish but you could stick that in the mix as well.
How do you feel about Chinese food/do you have easy access to a market where they'd sell Asian ingredients? Buddhism led to the development of a lot of solid vegetarian dishes.
I have a super easy version of ratatouille which I bung in the oven and then combine with EVERYTHING. I add chickpeas and eat it with bread or over couscous. I add chunks of haloumi in and have it with potatoes, or more bread. I stir it through pasta. I use it to accompany felafel or veggie patties or fried eggs or an omelette. I stir in cannelini beans and feta and dill and pretend it's Greek and have it with pita bread.
I suspect it's the most recent recipe on my food blog, which I don't want to go and look at right now because I'm a little depressed about abandoning it (and about cooking generally). The idea is that it makes a very large amount and gives you three or four meals worth of food that you don't have to think about. It freezes well, too.

I also have a nice, easy chilli recipe that I make with orange sweet potato and black beans. You peel and cube the sweet potato and microwave it or otherwise cook it in advance. Then you sauté onions with oil and cumin and oregano, bung in a tin or two each of tomatoes and of (drained) black beans and a chopped chipotle chilli or two (amount depends on how big your sweet potatoes are), and simmer until it all tastes nice. Serve with cheese and corn chips and guacamole.
