Gah. Sinuses appear to be filled with concrete. Cough vile.
I think tomorrow would be an appropriate day - in terms of health needs! - to eat a fairly oriental chicken noodle soup with chillis. I could go and fritter more money away at the (rather good) Chinese carryout, but does anyone have a decent recipe they could contribute instead? That would probably be cheaper and certainly be more satisfying.
Bother, I was going to make the Ember tart, wasn't I? I wonder if you could put chillis in that.... (No, definitely a bad idea!

Date: 2008-12-12 09:18 am (UTC)Put a skinless chicken breast (I recommend Mr Feller's) in 500ml of fairly good-quality chicken stock (fresh stock from the supermarket is fine, a cube not so much). Bring to the boil, cook until the chicken is tender, then remove it, shred and set aside.
Add two finely chopped spring onions, a clove of garlic (also finely chopped), a stalk of lemongrass chopped into 1-inch lengths, a thinly sliced and seeded red chilli or two and a couple of lime leaves to the broth and simmer for ten minutes. Add half a tablespoon of fish sauce, half a teaspoon of sugar, the chicken and as many dried rice noodles as you want. Cook until the noodles are done, then stir in half a tablespoon of lime juice and half a tablespoon of chopped coriander.
This is fantastic for a cold (I really wish I had some right now!) and is also what we always eat on Boxing Day as an antidote to the Christmas indulgence.
